Subject notes
There were 9 tuns for fermenting and 6 settling backs (tanks), all temperature controlled. A small gas engine was used to pump beer from the tuns to the backs. The beer was then pumped through large copper mains under Newmarket Street to the racking rooms where the sediment was cleared.
