The wort is cooled to 20°C and pumped from the mash tuns into the washbacks, where yeast is added and fermentation begins. The yeast feeds on the sugars, producing alcohol and carbon dioxide which causes the wash to froth violently. Revolving switchers driven by the electric motors mounted over the lids cut the head to prevent it overflowing. After about 2 days, fermentation dies down and the wash contains 6-8% alcohol.
